There’s something irresistible about a perfectly made red velvet cupcake: fluffy, moist, and strikingly red with that signature hint of cocoa and vanilla. These cupcakes are topped with a creamy, vanilla cream cheese frosting that melts on your tongue with just the right balance of tang and sweetness. They’re the kind of treat that makes you close your eyes for a second bite. 🩷

When I used to sell custom cakes/cupcakes, red velvet cake/cupcakes were one of my top sellers! I still make them often because my hubbie, mother in law, sister in law...friends...they all love this cupcake! I love it too :)

🥣Main Ingredients
Ingredient picture for the red velvet cupcakes to be added in the future :)
Cream Cheese Frosting
- Unsalted butter: Adds richness and structure, key ingredient in helping the frosting hold its shape.
- Powdered sugar: Sweetens and thickens while keeping the frosting light and fluffy.
- Vanilla: Adds warm, sweet flavor that enhances the tang of the cream cheese.
- Cream cheese: The star ingredient that gives the frosting its creamy texture and signature tang.
Red Velvet Cupcakes
- All-purpose flour: Provides structure and stability to the cupcakes.
- Granulated sugar: Sweetens and helps lock in moisture. It also acts as a tenderizer.
- Baking soda: Works with vinegar to create lift and a tender crumb.
- Fine sea salt: Balances sweetness and enhances all the flavors.
- Unsweetened cocoa powder: Adds a light chocolate flavor and depth.
- Egg: Binds the ingredients together and helps with structure.
- Vegetable oil: Keeps the cupcakes extra soft and moist.
- Heavy cream: Enriches the batter for a tender texture.
- Sour cream: Adds flavor (tang) and moisture, keeping the crumb soft.
- White vinegar: Reacts with baking soda for extra fluffiness and helps set the red color.
- Red gel food color: Creates that classic bold red hue. Using gel food coloring is more pigmented and uses less coloring but you can substitute with regular red food coloring as well.
- Vanilla extract: Rounds out the flavors with warmth.

✨Step By Step Instructions
Step 1: Make Frosting
Whip butter until smooth with powdered sugar and vanilla extract.
Then add softened cream cheese and mix until fluffy but don’t overmix so the frosting doesn’t become loose. Just enough that the cream cheese is incorporated once you’ve added it. Cover and store in the fridge and move on to making red velvet cupcakes.
Cover and store in the fridge and move on to making red velvet cupcakes.
Step 2: Prepare Batter
Whisk together flour, sugar, cocoa, baking soda, and salt in a large bowl. In another bowl, whisk egg, oil, heavy cream, sour cream, vinegar, vanilla, and red food coloring until smooth.
Step 3: Combine
Pour the wet mixture into the dry and whisk gently until just combined. Avoid overmixing! (this keeps the cupcakes soft).
Step 4: Bake
Line a muffin tin with cupcake liners and divide batter evenly. Bake as directed in the recipe card or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
Pro tip: Allowing the cupcakes to cool completely and chilling the cream cheese frosting briefly before decorating your cupcakes prevents your frosting from melting and becoming a wet mess!
Step 5: Frost and Enjoy
Transfer frosting to a piping bag and swirl onto cooled cupcakes. Enjoy immediately or store for later.
🔄Substitutions/Variations
If you know how to make the recipe fit a certain diet, let the reader know here. Don't Want to switch it up? Here are some variations and substitutions you can try✧ദ്ദി( ˶^ᗜ^˶ ):
- Mini Cupcakes: Bake in mini cupcake trays for 10–12 minutes for bite-sized treats.
- Chocolate Chip Red Velvet: Fold in mini chocolate chips before baking for extra richness.
- Colorful Velvet: Swap red gel for for another color instead to make it customizable! Since it has light brown tint due to the cocoa powder, you won’t really get light pastel colors, just for you to keep in mind when deciding on a color.
- Nutty Crunch: Top frosted cupcakes with chopped pecans or walnuts.
- Filled Cupcakes: Hollow out the center and fill with more cream cheese frosting, strawberry jam or chocolate ganache.
Enjoy! ദ്ദി ˉ͈̀꒳ˉ͈́ )✧ Please tag @sparklecakerie if you make this! I’d love to see and share your creations ♡⸜(˶˃ ᵕ ˂˶)⸝♡⋆˚✿˖°
🔪Tools
- Mixing bowls
- Whisk and spatula
- Electric mixer (hand or stand)
- Muffin tin + liners
- Measuring cups and spoons
- Piping bag (optional, for frosting), you can use a spoon instead for a rustic look.
🍪How To Store/Freeze
- Room temperature: Unfrosted cupcakes can sit covered for up to 2 days on counter top.
- Fridge: Frosted cupcakes should be stored in an airtight container for up to 4–5 days. The frosting will firm naturally in the cold fridge but still taste delicious. Optionally, you can take out 10-30 minutes beforehand to allow the cupcake/frosting to soften before enjoying.
- Freezer: Unfrosted/frosted cupcakes freeze well for up to 2 months. Thaw at room temperature, then frost before serving. Cover and store in an airtight container in the freezer.
⏲️Overwhelmed? Make Ahead!
Do you feel overwhelmed or have a busy schedule but still want to make this recipe?! Here is a general idea of the work flow I would do as a professionally trained baker (with a degree in Baking & Pastry Arts) and years of experience in NYC bakeries to help you have more fun!⬇٩(^ᗜ^ )و ´-
(Spoiler (ᴗ͈ˬᴗ͈)ꕤ.゚: most bakes in professional kitchens/bakeries are broken down into steps for efficiency. We usually aren't measuring, mixing, baking EVERYTHING on the same day. Some components are prepped beforehand so don't feel bad if you feel like you aren't accomplishing what you'd like to in your baking journey, you just haven't figured out the right system yet! Let me help you with that~⋆˙♡)
You can combine any of the work days to suit your timeline. The idea is you really don't have to make everything in ONE DAY! My recipe card below is written in a way to make and bake this in one day for recipe structuring purposes (as well as reading or printing) but if I were to break up the baking steps for this recipe, this is what I would do:
˗ˏˋ ★ Day By Day Baking Steps For Red Velvet Cupcakes★ ˎˊ˗
Day 1: Prep Ingredients
- Double-check you have all ingredients. Measure them all out.
- Line your cupcake tin with paper liners and set out tools (bowls, whisk, spatula) so you’re not scrambling later.
Day 2: Make Frosting & Decorate
- Take butter and cream cheese from the fridge to soften at room temperature about 30 minutes - 1 hour beforehand depending on how warm your kitchen is.
- Whip butter, powdered sugar, and vanilla until smooth and fluffy. Mix in cream cheese until incorporated.
Day 3: Bake Cupcakes
- Mix and bake the red velvet cupcake batter.
- Let the cupcakes cool completely on a wire rack (very important before frosting).
- Once cooled, store cupcakes in an airtight container at room temp if frosting the next day, or refrigerate if waiting longer.
Day 4: Assemble Red Velvet Cupcakes
- Take cream cheese frosting out and let it warm up (while covered) before attempting to frost. It should take about 30 minutes (or longer depending on room temperature).
- Frost cupcakes with cream cheese frosting with a piping bag or spatula.
- Add decorations (sprinkles, shaved chocolate, or heart toppers for a fun touch).
- Serve the cupcakes fresh for the best texture.
- Store frosted red velvet cupcake leftovers in the fridge in an airtight container for up to 4–5 days (eat cold or bring to room temp before eating).
- Freeze unfrosted cupcakes for up to 2 months, then thaw and frost when ready.
Feel free to combine any of the day steps to suit your schedule :)
˗ˏˋ ★ ˎˊ˗ woohoo, you did it!!! ٩>ᴗ<)و I hope this was fun and it helped you become a more confident baker ˗ˏˋ ★ ˎˊ˗

- 30 grams heavy cream
- 125 grams sour cream
- 1 ½ teaspoon white vinegar
- 1 teaspoon red gel food color
- 1 teaspoon pure vanilla extract or paste
Instructions
Cream Cheese Frosting:
Whip Butter Base:
- In a mixing bowl, beat softened 113 grams unsalted butter, 70 grams powdered sugar, and 1 tablespoon vanilla (if using) on medium-high until light and fluffy (2-3 mins).
- Tip: This step prevents overmixing later!
Add Cream Cheese:
- Mix in softened 226 grams cream cheese on low until just combined, then whip on medium-high for 30 seconds until fluffy. Stop once smooth, overmixing causes runny frosting!
Chill:
- For perfect piping frosting texture, refrigerate 20-30 mins before piping/spreading. Bake the red velvet cupcakes while waiting for cream cheese frosting to chill.
Red Velvet Cupcakes:
Preheat Oven
- Preheat the oven to 350°F (175°C) and line a cupcake tin with cupcake liners.

- Measure out wet ingredients (buttermilk, oil, eggs, vanilla, vinegar, and red food coloring).

Bake & Cool
- Bake for 14–16 minutes, or until a toothpick inserted in the center comes out mostly clean.

- Pipe or spread frosting onto cooled cupcakes.
- Optional: garnish with cake crumbs, sprinkles, or shaved white chocolate.
- Serve immediately or store in the fridge in an airtight container.
