🥣Main Ingredients
- Zucchini: Adds tons of moisture to keep the bread soft and tender. Since zucchini has a mild flavor, your lemon zucchini loaf will not taste like veggies and the lemon flavors will shine brightly.
- Lemon: Brings fresh, zesty flavor and a little tang that makes the bread bright and balances the sweetness.
- Egg: Helps hold everything together and gives the bread structure so it’s not crumbly.
- Vegetable Oil: Keeps the bread extra moist and soft, even after a couple of days.
- All Purpose Flour: The base that gives the bread its shape and fluffy texture.
- White Sugar: Sweetens the quick bread, helps with browning while baking, and acts as a tenderizer that also helps with the soft texture.
- Sea Salt: Balances the sweetness.
- Baking Powder and Baking Soda: Leavening agents that help the bread rise and stay light instead of dense.
- Cinnamon: Adds a warm, cozy flavor that pairs beautifully with the lemon and zucchini.

✨Step By Step Instructions
Step 1: Prep Your Pan & Oven
Butter a loaf pan and line it with parchment paper so the bread lifts out easily. Preheat your oven to 325°F with fan (or 350°F without fan).
Pro Tip: Lining with parchment makes cleanup easy and guarantees no sticking.

Step 2: Measure Dry
In a large bowl, whisk together your dry ingredients. This helps them combine evenly.

Step 3: Shred & Zest
Grate the zucchini directly into the bowl of dry ingredients so there's less dishes to clean. Zest the lemon into the same bowl and set the rest of the lemon aside for later (you’ll use the juice for the glaze). If using fresh ginger, grate it into the same bowl as well.
Pro Tip: No need to squeeze the water out of the zucchini! Its natural moisture keeps the bread soft and tender.

Step 4: Mix Batter
Add wet ingredients into the dry ingredients. Use a spatula to gently mix a bit, no need to overmix. Add the rest of the wet ingredients and mix until smooth. No dry streaks, no wet patches! Don't overmix.
Warning: Don’t overmix! Stirring too much can make the quick bread dense instead of fluffy.

Step 5: Bake & Glaze
Pour the batter into your prepared pan and bake for 25–30 minutes, until a toothpick in the center comes out mostly clean (a few crumbs are okay). Let the loaf cool on a wire rack. While cooling, make the glaze by mixing the lemon juice with powdered sugar until smooth and pourable. Drizzle the glaze evenly over the bread. Once cooled, lift out using the parchment paper, slice, and enjoy!
Pro Tip: Pour glaze while the bread is slightly warm so it sinks in just enough for extra flavor~ It also helps keep the lemon zucchini bread soft and moist for days.

🔄Substitutions/Variations
Want to switch it up? Here are some variations and substitutions you can try
✧ദ്ദി( ˶^ᗜ^˶ ):
- Blueberry Lemon Zucchini Bread: Fold in ⅓-½ cup fresh or frozen blueberries for a burst of juicy sweetness with every bite.
- Matcha Lemon Zucchini Bread: Add 1–2 teaspoons of matcha powder to the dry ingredients for a soft green color and earthy flavor that pairs beautifully with lemon.
- Coconut Lemon Zucchini Bread: Mix in shredded coconut and swap part of the oil for coconut oil for a tropical, nutty twist.
- Lemon Poppy Seed Zucchini Bread: Stir in a couple tablespoons of poppy seeds for a lemon poppy version.
🍪How To Store/Freeze
- At Room Temperature: Store sliced or whole loaf in an airtight container for up to 2–3 days. The glaze may soak into the loaf a little, making it extra moist and it may lose its slight crunch over time.
- In the Fridge: Keep in an airtight container for up to 5-7days. The lemon zucchini bread will stay moist, but the loaf may firm up slightly and lose its slight crunch over time. Take the loaf out from the fridge 15-20 minutes to let it come to room temperature before enjoying or a light toast in your toaster oven.
- In the Freezer: Without the lemon glaze, wrap the loaf (whole or sliced) tightly in plastic wrap, then place in a freezer bag or freezer safe, air tight container for up to 2–3 months. Thaw overnight in the fridge or at room temperature. You can make a fresh glaze to top the defrosted loaf or you can make the glaze at the same time as the loaf but freeze separately and then assemble when serving.
✨ Pro tip: If freezing sliced, place parchment paper between slices so you can pull out just one at a time for quick snacks.
