✨Step By Step Instructions
Step 1: Prep Cake Pan & Preheat Oven
Heat oven to 350°F (325°F with fan). Grease and line an 8"x8" pan with parchment by crumbling the parchment paper into a ball then spread out into the cake pan. Trim off paper that hangs above and over the edges.
Pro tip: 8” square or circular pan works too (disposable or reuseable). Make this in whatever shape you'd like…free will!!!
Step 2: Make Streusel
Mix together streusel ingredients until crumbly, cover, and set aside.
Pro tip: If you feel like it's too “wet”, you can refrigerate for about 15-20 minutes to help the dough firm up while you make the cake batter.
Step 3: Dry Ingredients For Cake
Sift dry cake ingredients together to ensure even baking.
Step 4: Mix Wet Ingredients
Into the pumpkin spice cake dry ingredients, add the oil, eggs, and pumpkin puree. Mix together until just combined, don't overmix.
Step 5: Bake
Pour all the pumpkin spice cake batter into the prepared pan lined with parchment paper. Crumble and spread an even layer of streusel on top of the cake mixture and bake. Cool and enjoy!
🔄Substitutions/Variations
Want to switch it up? Here are some variations and substitutions you can try✧ദ്ദി( ˶^ᗜ^˶ ):
- For the tea lovers: Add 1-3 teaspoons of matcha or hojicha powder to the streusel topping for an earthy, slightly bitter note to balance the pumpkin cake's sweetness.
- Cream cheese swirl: Swirl dollops of sweetened cream cheese to the batter before baking for a pumpkin cheesecake inspired version.
- Nuts for nuts! Mix chopped toasted pecans, walnuts, or grounded/roughly grounded black sesame seeds into the streusel for extra texture and nutty contrast.
- Use your favorite spice blends: Use your favorite pumpkin spices , play around with chai spices (cardamom, cinnamon, ginger, and clove), or use Chinese 5 spice for a fragrant twist.

🔍Common Questions
Coffee cakes can have a thinner streusel and a variety of optional add-ins like fruits, nuts, or glazes. Mainly baked to pair with coffee. Crumb cakes are very similar if not the same but with a more obviously thicker crumb topping. The main focus is the crumb topping’s flavor and texture. Not a major difference! You can call “coffee cakes” …”crumb cakes” and most of the time, people will understand you. I actually prefer to call them all “crumb cakes” or “snack cakes” just because it can sound misleading to call snacking cakes “coffee cakes” when there isn't any coffee flavor in it.
‼️Pro Tips
Here are some tips I learned from mistakes I made so you can make this recipe perfectly!
- Use pure pumpkin puree, not pie filling. Pie filling has added sugar and spices, which can throw off your cake’s texture and flavor balance.
- Don’t overmix the batter! Once the flour goes in, gently stir until just combined. Overmixing can make your cake dense instead of soft and tender.
- Keep the crumb cold. If your crumb mixture feels too soft, pop it in the fridge for a few minutes before crumbling evenly on top of the cake batter.
- Check with a toothpick. Insert it into the center and if it comes out with a few moist crumbs (not wet batter), it’s done! It will continue to bake a little while cooling.
Cool completely before cutting. The crumb firms up as it cools, making the slices cleaner and the texture even better.
🔪Tools

- rubber spatula
- baking pan
- measuring spoons
- kitchen scale/measuring cup
- knife
- parchment paper
🎃How To Store/Freeze
Here’s how to store your pumpkin crumb cake to keep it soft and yummy for days:
At Room Temperature (Best for short-term):
- Store the cake tightly covered or in an airtight container for up to 2–3 days. Keep it in a cool, dry
In the Fridge:
- Store your pumpkin crumb cake in an airtight container for up to 5–6 days.
- Let it come to room temperature before serving so the crumb topping softens slightly again and the cake tastes moist, not firm or dense from the chill.
Pro tip: you can warm a slice in the microwave for 10–15 seconds to bring back that fresh-from-the-oven texture or use an oven-style toaster.
⏲️Overwhelmed? Make Ahead!
Do you feel overwhelmed or have a busy schedule but still want to make this recipe?! Here is a general idea of the work flow I would do as a professionally trained baker (with a degree in Baking & Pastry Arts) and years of experience in NYC bakeries to help you have more fun!⬇٩(^ᗜ^ )و ´-
(Spoiler (ᴗ͈ˬᴗ͈)ꕤ.゚: most bakes in professional kitchens/bakeries are broken down into steps for efficiency. We usually aren't measuring, mixing, baking EVERYTHING on the same day. Some components are prepped beforehand so don't feel bad if you feel like you aren't accomplishing what you'd like to in your baking journey, you just haven't figured out the right system yet! Let me help you with that~⋆˙♡)
You can combine any of the work days to suit your timeline. The idea is you really don't have to make everything in ONE DAY! My recipe card below is written in a way to make and bake this in one day for recipe structuring purposes (as well as reading or printing) but if I were to break up the baking steps for this recipe, this is what I would do:
˗ˏˋ ★ Day By Day Baking Steps For Pumpkin Crumb Cake★ ˎˊ˗
Day 1: Prep Ingredients & Tools
Double-check you have all ingredients. Measure your dry cake ingredients in a container and cover. In a separate container, measure streusel ingredients and cover. In another separate container with cover, measure wet ingredients. Set up your tools.
You can optionally make your streusel beforehand as well.
Day 2: Mix & Bake
Mix and bake your pumpkin crumb cake. Let the cake cool completely before slicing and serving.
Day 3: Cut & Serve (Optional)
Serve the cake the next day instead if you prefer not to rush the baking and cooling process to fit your timeline.
˗ˏˋ ★ ˎˊ˗ woohoo, you did it!!! ٩>ᴗ<)و I hope this was fun and it helped you become a more confident baker ˗ˏˋ ★ ˎˊ˗
