This recipe can be made in one day or broken into steps across several days depending on your schedule.
Option 1: Same-Day
Follow the recipe card for same day frozen custard (the ice cream machine must be prepped beforehand).
Option 2: Make Ahead
Day 1: prep ingredients/tools
Day 2: Cook custard, let cool, then cover and refrigerate.
Day 3: Set up your ice cream machine and pour the custard base into the machine and churn. Enjoy or transfer to an airtight, freezer safe container and freeze.

🔍 WHAT MAKES THIS WORK (only if more complicated recipe)
What makes this frozen custard recipe so special is the combination of whole eggs and heavy cream. Using whole eggs instead of just yolks gives the finished custard a lighter color and a slightly airier texture, while the cream brings that signature richness. You also won’t end up with leftover egg whites. The vanilla bean paste adds little flecks throughout, like a promise of good things to come, and the optional splash of coconut rum adds a warm, tropical note that pairs wonderfully with the vanilla without being overpowering. Make it once and it will become your go-to all summer long.
Main Ingredients

- Heavy cream gives frozen custard recipe its rich, dense texture and signature creamy mouthfeel, setting it apart from lighter ice creams.
- Sugar sweetens the base and also lowers the freezing point, helping the finished custard stay scoopable rather than rock solid.
- Eggs are what make this a true custard. They add richness and act as an emulsifier, giving the frozen custard its smooth, velvety body.
- Vanilla bean paste delivers a deeper, more complex vanilla flavor than extract, and the visible flecks of real vanilla seeds are a nice touch throughout.
- Coconut rum/white rum adds a subtle warmth to the finished custard. It is optional, but a small amount of alcohol also helps keep the texture softer straight from the freezer.

🥄TOOLS YOU’LL NEED
- Kitchen scale, used for weighing ingredients if using metric.
- Measuring cups, used for volume measurements if using imperial.
- Measuring spoons, used for small measurements.
- Medium saucepan, used for cooking custard.

Alternative: any airtight freezer bag or tightly lidded container works well.
Optional Upgrades:
- Instant-read or candy thermometer, used for monitoring temperature.

Alternative: not needed, but useful for removing any cooked egg bits for a smoother texture.
HOW TO MAKE (STEP-BY-STEP)
Prepare Custard Base

Step 1: Combine ingredients in a medium saucepan, whisking everything together until smooth. Cook over medium heat and stir continuously to thicken gradually.

Step 2: Cook until the mixture has thickened enough to coat the back of your spoon. When you run a finger through the coating on the spoon and it holds a clean line, you are ready. Remove the pot from the heat immediately to stop the cooking.

Strain if you accidentally overcooked mixture. No worries, we can fix it :)

Step 3: Let the custard cool completely loosely covered then fully cover & chill in the fridge. Make sure your ice cream machine bowl has been pre-chilled according to your manufacturer's directions. Turn on the machine, then slowly pour in your cooled custard base in a steady stream.
Churn

Let it churn for about 20 minutes, or until the custard looks thick, pale, and creamy and the paddle is working hard to turn it. Enjoy!

Enjoy fresh from the ice cream machine in it's soft, creamy goodness or move to your choice of ice cream container and enjoy fully frozen ! :)
‼️PRO TIPS FOR SUCCESS
- if you accidentally overcook the custard a bit so there are egg bits, you can run the custard through a strainer to help make it smooth
👩🏻🍳RECIPE TESTING NOTES
What I tested
- This is a very straight forward frozen custard recipe using a modified version of the “custard method” technique so I didn’t need to do too many tests other than making sure the texture was to my preference! The first run I used only heavy cream and it was very rich
- The second test I did half heavy cream and half milk which I preferred the texture for a classic vanilla flavor but I can see using all heavy cream working really well with tarty, fruity flavors!
- I did try a few variations infusing the milk with oolong tea leaves before cooking, chilling, and churning ... .SO GOOD!!! I’ve also tried replacing the whole milk with pistachio milk and the other half with cream successfully…very versatile base recipe for many flavor combinations!!!

🔄Substitutions & Flavor Ideas
Want to switch it up? Here are some variations and substitutions you can try✧ദ്ദി( ˶^ᗜ^˶ ):
- For tea infused frozen custard recipe, try gently heating the milk with the tea leaves first, let it cool and then add the rest of the ingredients to cook! (1-2 tablespoons tea leaves per 1x the recipe)
Enjoy! ദ്ദി ˉ͈̀꒳ˉ͈́ )✧ Please tag @sparklecakerie if you make this! I’d love to see and share your creations ♡⸜(˶˃ ᵕ ˂˶)⸝♡⋆˚✿˖°

❄️STORAGE INSTRUCTIONS
Room Temp
- This Frozen Custard Recipe should not be left at room temperature for more than 10 to 15 minutes. It softens quickly, so scoop and serve right away for the best texture.
Fridge
- Not recommended for storage in the fridge, as the custard will melt and lose its creamy, scoopable texture. If you need to soften it for serving, move it from the freezer to the fridge for about 15 to 20 minutes before scooping.
Freezer
- Transfer to a freezer-safe, airtight container, label with the name and date, and freeze for up to two weeks for best quality. To serve, let it sit on the counter for 5 to 10 minutes until just soft enough to scoop cleanly.

Easy Frozen Custard Recipe
Equipment
- 1 Kitchen Scale, if using metric
- Measuring cups if using imperial
- Measuring spoons
- 1 Medium saucepan
- 1 silicone spatula or wooden spoon
- 1 Ice cream machine
- 1 Freezer-safe airtight container or take out quart container/freezer bag
- 1 Fine mesh strainer not needed, but useful for removing any cooked egg bits for a smoother texture.
Ingredients
- 600 grams heavy cream half & half works too
- 100 grams sugar
- 1 pinch sea salt
- 2 large eggs
- 1 tablespoon vanilla bean paste
- 1 to 2 tablespoons white or coconut rum optional
Instructions
Cook the Custard
- Combine the heavy cream, sugar, salt, and eggs in a medium saucepan, whisking everything together until smooth.600 grams heavy cream, 100 grams sugar, 1 pinch sea salt, 2 large eggs

- Place the pot over medium heat and stir continuously with a wooden spoon or silicone spatula. Keep the heat steady and patient, you want this to thicken gradually without scrambling the eggs. Cook until the mixture just begins to bubble around the edges and has thickened enough to coat the back of your spoon. When you run a finger through the coating on the spoon and it holds a clean line, you are ready. Remove the pot from the heat immediately to stop the cooking.

- Stir in the vanilla and rum if using. Both go in off the heat to preserve their flavor.1 tablespoon vanilla bean paste, 1 to 2 tablespoons white or coconut rum
- Cover the pot with lid and let the custard cool completely before chilling in the fridge. Chill fully in fridge for about 1-2 hours.

Churn
- Make sure your ice cream machine bowl has been pre-frozen according to your manufacturer's directions.Turn on the machine, then slowly pour in your fully chilled custard base in a steady stream. Let it churn for about 20 minutes, or until the custard looks thick, pale, and creamy. The paddle will start to have trouble churning and that resistance is a good sign you are done.

- Enjoy it soft-serve style right from the machine, or transfer it to a freezer-safe airtight container, label it, and freeze until firm.
