🥣Main Ingredients

- Mochiko: The sweet rice flour gives the cake its naturally gluten-free structure and a soft, slightly chewy texture. It won’t be chewy like mochi but it will have more bite than a cake made with wheat flour.
- Granulated white sugar: Sweetens the cake and tender.
- Cocoa powder: Provides rich chocolate flavor and color.
- Baking soda: Leavens the cake, helping it rise and stay light.
- Salt: Balances sweetness and enhances chocolate flavor.
- Espresso powder or pure vanilla extract (optional): Deepens and rounds out the chocolate notes.
- Milk: Adds moisture, tenderness, and helps bind dry ingredients.
- Unsalted butter: Brings richness, flavor, and a tender crumb.
- Large eggs: Provide structure, stability, and extra moisture to hold everything together.
See recipe card below for ingredient measurements! This is for those that want a more in-depth idea of what each ingredient is and what they do. ٩(^ᗜ^ )و ´-
✨Step By Step Instructions
Step 1: Preheat the oven to 325°F with fan or 350°F without fan. Line an 8x8x3-inch square pan with parchment paper. Cut or tear parchment paper to roughly match the pan’s size with it upside down so you're measuring it from one side over the back of the pan towards the next side. Crumble the paper so it's easier to press the parchment into the bottom of the pan and up the sides, smoothing out the folds. Trim off overhang of parchment so it's easier to work with. No need to be perfect!

Step 2: In a medium bowl, whisk the dry ingredients together.

Step 3: In another bowl, mix the wet ingredients. Add them to the dry ingredients a little at a time, stirring until no dry spots remain.

Step 4: Pour the batter into the pan and bake for 20–25 minutes, or until the center is set and not jiggly.

Pro Tip: If frosting, let the cake cool completely first.
Step 5: Slice into 2x2-inch squares with a serrated knife and enjoy!

⏲️Overwhelmed? Make Ahead!
Do you feel overwhelmed or have a busy schedule but still want to make this gluten free chocolate snack cake recipe?! Here is a general idea of the work flow I would do as a professionally trained baker (with a degree in Baking & Pastry Arts) and years of experience in NYC bakeries to help you have more fun!⬇٩(^ᗜ^ )و ´-
(Spoiler (ᴗ͈ˬᴗ͈)ꕤ.゚: most bakes in professional kitchens/bakeries are broken down into steps for efficiency. We usually aren't measuring, mixing, baking EVERYTHING on the same day. Some components are prepped beforehand so don't feel bad if you feel like you aren't accomplishing what you'd like to in your baking journey, you just haven't figured out the right system yet! Let me help you with that~⋆˙♡)
You can combine any of the work days to suit your timeline. The idea is you really don't have to make everything in ONE DAY! My recipe card below is written in a way to make and bake this in one day for recipe structuring purposes (as well as reading or printing) but if I were to break up the baking steps for this recipe, this is what I would do:
˗ˏˋ ★ Day By Day Baking Steps For Gluten Free Chocolate Snack Cake ★ ˎˊ˗

- Prep Pan: Lightly grease an 8×8×3-inch square pan and line it with parchment paper. Cover and set aside on the counter top.
Day 2: Bake & Cool
- Preheat & Prep Pan: Preheat oven to 325°F (with fan) or 350°F (without fan).
