🩵Ease Level & Flavor Profile
Ease level: The cake itself is simple (very similar to a box mix except it’s from scratch!) but whipping and torching the meringue adds a fun challenge.
Flavor profile: Cozy pumpkin spice with warm cinnamon, ginger, and cardamom, balanced by a light, toasty, marshmallow-like cinnamon meringue frosting.
Amount Of Dishes: 2–3 bowls (one for dry, one for wet, one for meringue), plus a whisk/stand mixer, spatula, and cake pan.

🥣Main Ingredients
Dry Ingredients
- All-purpose flour: Gives the cake structure and stability.
- Ground cinnamon: The warm, sweet spice that sets the tone for pumpkin desserts.
- Ground 5 spice: Adds depth with hints of anise, clove, and peppery warmth.
- Ground cardamom: Brings a floral, slightly citrusy lift to balance richness.
- Ground ginger: Adds a gentle spicy kick that brightens the cake.
- Baking powder & baking soda: Help the cake rise light and fluffy.
- Fine sea salt: Balances sweetness and sharpens the flavors.
- Malted milk powder (optional): Adds a creamy, nutty undertone that enhances depth.
Liquid Ingredients
- Taiwanese granulated black sugar or light/dark brown sugar: Sweetens while adding caramel-like richness.
- Vegetable oil: Keeps the crumb moist and tender.
- Large eggs: Provide structure, richness, and help bind the batter.
- Pumpkin purée: The star ingredient that adds moisture, flavor, and natural sweetness.
Cinnamon Meringue Ingredients
- Egg whites (room temperature): When whipped, this is what creates the airy meringue base. Room temperature is a lot easier to whip to stiff peaks versus cold egg whites.
- White vinegar or lemon juice: Stabilize the egg whites for a strong, glossy foam. It helps to break down the proteins in the egg whites to make it easier to whip.
- Granulated white sugar: Sweetens and sets the meringue structure (helps give it stability)
- Fine sea salt: Balances sweetness.
- Ground cinnamon: Infuses the meringue with warm spice flavor.

🔄Substitutions/Variations
Want to switch it up? Here are some variations and substitutions you can try✧ദ്ദി( ˶^ᗜ^˶ ):
- No Five Spice? No problem. Adjust to taste: replace 5 spice with more cinnamon and nutmeg if you prefer a classic pumpkin spice blend.
- No Taiwanese black sugar? No worries, you can swap with light/dark brown sugar or granulated muscovado for a similar molasses depth.
- Instead of Pumpkin purée, you can try mashed sweet potato or another root veggie for another flavor profile.
- Malted milk powder: Skip it if unavailable, or replace with milk powder for a similar creamy note.
- If you don’t like Cinnamon Meringue Frosting, feel free to swap for a tangy, vanilla cream cheese frosting instead.

‼️Pro Tips
Here are some tips I learned from mistakes I made so you can make this recipe perfectly!
- Room temp eggs are key. They whip more evenly and readily, giving you a fluffier meringue.
- Bake until the edges pull away. Pumpkin cake can look “done” on top before it’s cooked through. Check the center with a toothpick to be safe. It should come out mostly clean.
- For a stable meringue, add the sugar gradually, spoonful by spoonful, so the egg whites stay glossy and strong.
🎃How To Store/Freeze
Room Temperature
- Since the frosting is meringue-based, it’s best enjoyed the same day. If unfrosted, the cake itself can be kept at room temperature, wrapped tightly, for up to 2 days. The meringue might get a little bit weepy/wet but will still be yummy! For aesthetic purposes, best to serve same day as assembling.
Refrigerator
- Once frosted, store the cake in the fridge, lightly covered, for up to 3 days. Bring slices to room temperature before serving for the best flavor and texture.
Freezer (Unfrosted Cake Only)
- Bake and cool the cake completely. Wrap slices (or the whole cake) or store in airtight, freezer friendly container. Freeze for up to 2 months.
- To serve, thaw overnight in the fridge, then bring to room temperature before adding your meringue frosting.
Pro Tip: Meringue frosting doesn’t freeze well (it weeps and loses its fluff), so always freeze the cake without frosting and whip up a fresh batch before serving.
⏲️Overwhelmed? Make Ahead!
Do you feel overwhelmed or have a busy schedule but still want to make this pumpkin spice cake recipe?! Here is a general idea of the work flow I would do as a professionally trained baker (with a degree in Baking & Pastry Arts) and years of experience in NYC bakeries to help you have more fun!⬇٩(^ᗜ^ )و ´-
(Spoiler (ᴗ͈ˬᴗ͈)ꕤ.゚: most bakes in professional kitchens/bakeries are broken down into steps for efficiency. We usually aren't measuring, mixing, baking EVERYTHING on the same day. Some components are prepped beforehand so don't feel bad if you feel like you aren't accomplishing what you'd like to in your baking journey, you just haven't figured out the right system yet! Let me help you with that~⋆˙♡)
You can combine any of the work days to suit your timeline. The idea is you really don't have to make everything in ONE DAY! My recipe card below is written in a way to make and bake this in one day for recipe structuring purposes (as well as reading or printing) but if I were to break up the baking steps for this recipe, this is what I would do:
˗ˏˋ ★ Day By Day Baking Steps For Pumpkin Spice Cake★ ˎˊ˗
Day 1: Prep & Gather
- Make sure you have all ingredients (especially pumpkin puree, spices, and eggs).
- Prep your cake pan by greasing + lining with parchment so it’s ready to go.
Day 2: Bake Cake
- Preheat the oven, whisk together dry and wet ingredients, and fold in pumpkin puree.
- Bake the cake and let it cool completely in the pan.
- Once cool, wrap tightly and store at room temperature (up to 1 day) or refrigerate.
Day 3: Make Frosting & Decorate
- Whip up the cinnamon meringue frosting (it’s best made fresh for stability).
- Uncover cake and frost. Toast the meringue with a kitchen torch for that golden, toasty finish.
- Decorate with sprinkles, cinnamon dust, or edible flowers. Enjoy!
˗ˏˋ ★ ˎˊ˗ woohoo, you did it!!! ٩>ᴗ<)و I hope this was fun and it helped you become a more confident baker ˗ˏˋ ★ ˎˊ˗
