Step 2: Sprinkle lemon juice and cinnamon on top. Roast for 10 minutes, stir, then roast for another 10 minutes until soft and jammy. Let cool completely.
For Streusel:

Step 1: In a small, heat safe dish, half melt butter in the microwave.

For Cookies Dough:

Step 1: In a medium bowl, whisk together dry ingredients.

Step 2: Stir in cooled melted butter, egg, and vanilla until a dough forms. If the dough feels too wet, chill for 15 minutes.

Step 3: Press some cookie dough along the sides of the bowl. Drop spoonfuls of fully cooled, roasted peaches inside and layer with more dough.

Step 4: Repeat once more so peaches are layered through the dough.

Step 5: Scoop the dough with a 1.5 oz ice cream scoop (about 3 tablespoon each) and roll into streusel topping (leaving the bottom plain) and place onto a parchment or plastic-lined tray, placing them close together. Chill for at least 30 minutes - 1 hour, or until firm.

Step 4: Place cookie dough on parchment lined baking sheet about 3 inches apart and bake for 12-16 minutes or until your preferred cookie texture.
‼️PRO TIPS FOR SUCCESS
- You must roast the peaches for this recipe to reduce the amount of water content!

👩🏻🍳RECIPE TESTING NOTES
What I tested
- This recipe base was inspired by my blueberry cookies so I didn’t need to make as many tests. I used canned peaches which I think worked and the streusel from my banana muffin recipe. Overall great texture but I think it could use a little more…flavor! The dough was a little too wet to handle, really sticky.
- I realized that I was missing the SPICES! How did I do that?! Haha I added in a touch of 5-spice and a little extra cinnamon when I stirred the roasted peaches for a more true peach cobbler flavor :) Decided to roll the cookie dough a little more in the streusel which made it overall easier to handle.
🔄Substitutions & Flavor Ideas
Want to switch it up? Here are some variations and substitutions you can try✧ദ്ദി( ˶^ᗜ^˶ ):
- Try another fruit! You can use blueberries, strawberries, or another fruit that holds well during roasting.
- Add flavor to your streusel topping! Try ground cardamom, matcha powder, or even adding sweetened coconut flakes or oats
Enjoy! ദ്ദി ˉ͈̀꒳ˉ͈́ )✧ Please tag @sparklecakerie if you make this! I’d love to see and share your creations ♡⸜(˶˃ ᵕ ˂˶)⸝♡⋆˚✿˖°

❄️STORAGE INSTRUCTIONS
For Baked Cookies:
- At room temperature, store cookies in an airtight container or resealable plastic bag. For soft cookies, place a slice of bread in the container to maintain moisture. Cookies stay fresh for 2-3 days. Because of the fresh fruit in these cookies, it’s better to eat them sooner than later to prevent molding especially in warmer/humid climates. Crisp cookies may last slightly longer but may lose some crunch over time. Store them in the fridge instead if your kitchen is humid/warm and take out 10-15 minutes to let it warm up before enjoying or toasting it.
- In the freezer, place cooled cookies in a single layer on a baking sheet to freeze, then transfer to a freezer-safe bag or container. Separate layers with parchment paper if you'd like to help prevent them from sticking when freezing the cookies. Cookies remain fresh for up to 1 month. Let them sit at room temperature for about 15 minutes or reheat in a 300°F (150°C) oven for a few minutes to refresh the texture when thawing.
For Unbaked Cookie Dough:
- In the fridge, wrap dough tightly in plastic wrap or store in an airtight container. Dough can be refrigerated for 2-3 days before baking. Bake directly from fully chilled at 325 F / 163 C (with fan) or 350 F / 176 C (without fan) for about 12-16 minutes depending on your cookie texture preference.
- In the freezer, shape dough into balls and freeze on a baking sheet until solid. Transfer to a freezer-safe bag or container, removing excess air. Frozen dough lasts up to 3 months. Bake directly from frozen at 300 F (with fan) or 325 F / 176 C (without fan) for 14-16 minutes. I love freezing extra cookie dough whenever I make batches so I always have a freshly baked treat whenever I want :) If you want it to spread more, lower the temperature and bake a little longer.
