These Pistachio Butter Cookies will be your next favorite cookie: toasty, buttery, and packed with nutty richness, all in a 30-minute, no-mixer recipe. Just scoop, bake, and enjoy their buttery, melt-in-your-mouth, sweet and slightly salty flavors! Perfect with tea, gifting, or straight off the tray (I won’t judge!).

I love to have a freezer cookie dough stash so store your extra cookie dough in a freezer safe container to bake off whenever you want a cookie you prepared beforehand!
If you love cookies, another favorite of mine is earl grey sugar cookies if you love tea or the yummy classic brown butter chocolate chip cookies!

🩵Ease Level & Flavor Profile
Ease level: Beginner-friendly. No mixer needed, just 1 bowl when you make 1x batch! If you make 2 or more batches, it’ll be easier if you have a stand mixer to handle the dough mixing.
Flavor profile: Rich, nutty, and lightly sweet with a buttery melt-in-your-mouth texture.
🥣Main Ingredients
Ingredient picture for the Pistachio Butter Cookies to be added in the future :)
- Unsalted butter: Provides richness, tenderness, and that classic melt-in-your-mouth texture. Lets you control the salt level precisely.
- Unsweetened pistachio butter: This is the star ingredient! Why Unsweetened? Let's you control the sweetness and pistachio flavor shine. This is the pistachio butter that I currently enjoy using because it's only one ingredient and no added sugar.
- Light brown sugar: Sweetens while adding molasses notes for caramel-like warmth. Its moisture keeps cookies thicker and less spread compared to granulated white sugar.
- Egg: Binds ingredients, adds structure, and contributes to a tender crumb.
- All-purpose flour: The backbone for these cookies and provides structure without making cookies dense. For softer cookies, don’t overmix (gluten development = toughness).
- Baking powder: Lifts the dough slightly for a delicate, crumbly texture (vs. baking soda’s spread).
- Salt: Balances sweetness and enhances pistachio’s nutty flavor.
See recipe card below for ingredient measurements! This is for those that want a more in-depth idea of what each ingredient is and what they do. ٩(^ᗜ^ )و ´-

📖Substitutions/Variations
Want to switch it up? Here are some variations and substitutions you can try
✧ദ്ദി( ˶^ᗜ^˶ ):
- Swap the Nut Butter. Try using a different nut butter like almond butter, peanut butter, or cashew butter for another flavor profile!
- Chocolate Chip It Up. Add chocolate chips like white, milk, or dark chocolate.
- Brown your butter and cool completely to use for pistachio butter cookies for toasty, caramelized notes that pair perfectly with pistachio.
Enjoy! ദ്ദി ˉ͈̀꒳ˉ͈́ )✧ Please tag @sparklecakerie if you make this! I’d love to see and share your creations on social media. ♡⸜(˶˃ ᵕ ˂˶)⸝♡⋆˚✿˖°
🔪Tools To Make Pistachio Butter Cookies
- microwave safe mixing bowl
- rubber spatula
- cookie scoop (1.5 ounce/3 tablespoon)
- parchment paper
- cookie sheet pan
- cooling rack
🍪How To Store/Freeze Pistachio Butter Cookies
- For Baked Cookies:
- At room temperature, store cookies in an airtight container or resealable plastic bag. For soft cookies, place a slice of bread in the container to maintain moisture. Cookies stay fresh for 3-5 days. Crisp cookies may last slightly longer but may lose some crunch over time.
- In the freezer, Place cooled cookies in a single layer on a baking sheet to freeze, then transfer to a freezer-safe bag or container. Separate layers with parchment paper if you'd like to help prevent them from sticking when freezing the cookies. Cookies remain fresh for up to 3 months. Let them sit at room temperature for about 15 minutes or reheat in a 300°F (150°C) oven for a few minutes to refresh the texture when thawing.
- For Unbaked Cookie Dough:
- In the fridge, wrap dough tightly in plastic wrap or store in an airtight container. Dough can be refrigerated for 2-3 days before baking. Bake directly from fully chilled at 325 F / 163 C (with fan) or 350 F / 176 C (without fan), adding 2-3 minutes to the original baking time.
- In the freezer, shape dough into balls and freeze on a baking sheet until solid. Transfer to a freezer-safe bag or container, removing excess air. Frozen dough lasts up to 3 months. Bake directly from frozen at 325 F / 163 C (with fan) or 350 F / 176 C (without fan), adding 2-3 minutes to the original baking time. I love freezing extra cookie dough whenever I make batches so I always have a freshly baked treat whenever I want :)

‼️Pro Tip
freeze your extra cookie dough! Having a cookie dough freezer stash is my secret weapon for late night cravings (who else loves a freshly baked cookie at 9pm??) and last-minute hosting guests/gifting! Pre-portioned dough means warm, freshly baked cookies are always 15 minutes away, no thawing needed. Will I bake them all at once? Probably…but I don’t see the problem :)
I've been using these stainless steel stackable containers. They aren't completely air tight but if you plan to only freeze for about a month, they should be okay without freezer burn. Each container should fit about 8x (1.5oz) scooped cookie doughs. To make it more airtight, use this press & seal before placing the lid on top to store the frozen cookie dough for up to 3 months. Until I find a better container, this is what I've been doing for now. Hope this helps. 💙✨
⏲️Overwhelmed? Make Ahead!
Do you feel overwhelmed or have a busy schedule but still want to bake this recipe?! Here is a general idea of the work flow I would do as a professionally trained baker (with a degree in Baking & Pastry Arts) and years of experience in NYC bakeries to help you have more fun!⬇٩(^ᗜ^ )و ´-
(Spoiler (ᴗ͈ˬᴗ͈)ꕤ.゚: most bakes in professional kitchens/bakeries are broken down into steps for efficiency. We usually aren't measuring, mixing, baking EVERYTHING on the same day. Some components are prepped beforehand so don't feel bad if you feel like you aren't accomplishing what you'd like to in your baking journey, you just haven't figured out the right system yet! Let me help you with that~⋆˙♡)
You can combine any of the work days to suit your timeline. The idea is you really don't have to make everything in ONE DAY! My recipe card below is written in a way to make and bake this in one day for recipe structuring purposes (as well as reading or printing) but if I were to break up the baking steps for this recipe, this is what I would do:
˗ˏˋ ★ Day By Day Baking Steps For Pistachio Butter Cookies★ ˎˊ˗
Day 1: Measure dry and wet ingredients in separate containers.
Day 2: Mix pistachio cookie ingredients together. Scoop out dough to bake or portion them out to chill/freezer until you’re ready to bake.
Day 3: Bake and enjoy!
You can combine any of the days to suit your schedule :)
˗ˏˋ ★ ˎˊ˗ woohoo, you did it!!! ٩>ᴗ<)و I hope this was fun and it helped you become a more confident baker ˗ˏˋ ★ ˎˊ˗

Recipe

Soft Pistachio Butter Cookies
Equipment
- 1-2 cookie sheet pan
- 1-2 sheets parchment paper
Ingredients
Wet Ingredients For Pistachio Butter Cookies
- 113 grams unsalted butter
- 128 grams unsweetened pistachio butter
- 200 grams light brown sugar
- 1 large egg cold
Dry Ingredients For Pistachio Butter Cookies
- 190 grams all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
Instructions
- Position a rack in the center of the oven and preheat to 350°F (with fan) or 375°F (without fan). Line a half sheet pan with parchment paper.
- Melt 113 grams unsalted butter using a microwave in a microwave safe bowl or small sauce pot on the stovetop, and let it cool completely (it should still be melted or soft to mix).
- In a medium bowl, whisk together all purpose flour, baking powder, and salt in a mixing bowl.
- Stir into the dry mix, melted unsalted butter, pistachio butter, brown sugar, and egg. Mix until combined with no wet or dry spots.
- Use a 1.5-ounce ice cream scoop to portion out about 11 cookie dough balls (about 3 tablespoons each doughball). Space them 3 inches apart on the prepared pan, and bake for about 10-12 minutes, or until the edges are set but the centers remain gooey. The pistachio butter cookies will appear puffed when removed from the oven but will fall and crack as they cool.
- Let the pistachio cookies cool on the pan, set on a wire rack for about 10 minutes, or until the edges and bottoms are firm to the touch. Repeat with the remaining dough.
- Enjoy cookies at room temperature or toast them for a warm cookie. Store any leftovers in an airtight container or zip-top bag at room temperature for up to 3 days. See more instructions on storage for freezing.
