Listen, if we're going to call something a strawberry shortcake cookies, it should actually taste like strawberries. Roasting the strawberries brings concentrated, jammy flavor to every bite, while a freeze dried strawberry streusel coating adds even more berry goodness and visual dynamics. The texture lands somewhere between a soft cookie and a butter cake, making them deliciously easy to eat straight from the cooling rack. The recipe is broken into simple day-by-day steps so the process feels manageable, even on a busy weeknight.

‼️PRO TIPS FOR SUCCESS
- You have to make sure that you roast the strawberries so it's not still watery before adding to cookie dough!

👩🏻🍳RECIPE TESTING NOTES
What I tested
- During my first few tests, I felt the cookies needed more strawberry flavor, so I increased the amount of roasted strawberries and had to adjust the ingredient ratios so it wasn’t such a wet dough.
- Once I was happy with the soft texture, I wanted more contrast and visual appeal. Rolling the cookies in streusel added a delicious buttery crisp and made them look more special!
- The streusel was a huge improvement, but naturally I wanted even MORE strawberry flavor (haha). I added freeze-dried strawberry pieces to the streusel since I had extras from another recipe test, which boosted the strawberry taste without adding extra moisture. One thing I love about this addition is how FLEXIBLE it is. You can skip the freeze-dried strawberries without affecting the streusel/cookie texture, or swap them for chopped nuts or shredded coconut for a different twist.
🔄Substitutions & Flavor Ideas
Want to switch it up? Here are some variations and substitutions you can try✧ദ്ദി( ˶^ᗜ^˶ ):
- Try another fruit! You can use blueberries, peaches, or another fruit that holds well during roasting.
- Add flavor to your streusel topping! Try ground cardamom, matcha powder, or even adding sweetened coconut flakes or oats
Enjoy! ദ്ദി ˉ͈̀꒳ˉ͈́ )✧ Please tag @sparklecakerie if you make this! I’d love to see and share your creations ♡⸜(˶˃ ᵕ ˂˶)⸝♡⋆˚✿˖°

❄️STORAGE INSTRUCTIONS
For Baked Cookies:
- At room temperature, store cookies in an airtight container or resealable plastic bag. For soft cookies, place a slice of bread in the container to maintain moisture. Cookies stay fresh for 2-3 days. Because of the fresh fruit in these cookies, it’s better to eat them sooner than later to prevent molding especially in warmer/humid climates. Crisp cookies may last slightly longer but may lose some crunch over time. Store them in the fridge instead if your kitchen is humid/warm and take out 10-15 minutes to let it warm up before enjoying or toasting it.
- In the freezer, place baked & cooled cookies in a single layer on a baking sheet to freeze, then transfer to a freezer-safe bag or container. Separate layers with parchment paper if you'd like to help prevent them from sticking when freezing the cookies. Cookies remain fresh for up to 1 month. Let them sit at room temperature for about 15 minutes or reheat in a 300°F (150°C) oven for a few minutes to refresh the texture when thawing.
For Unbaked Cookie Dough:
- In the fridge, wrap dough tightly in plastic wrap or store in an airtight container. Dough can be refrigerated for 2-3 days before baking. Bake directly from fully chilled at 325 F / 163 C (with fan) or 350 F / 176 C (without fan) for about 12-16 minutes depending on your cookie texture preference.
- In the freezer, shape dough into balls and freeze on a baking sheet until solid. Transfer to a freezer-safe bag or container, removing excess air. Frozen dough lasts up to 3 months. Bake directly from frozen at 300 F (with fan) or 325 F / 176 C (without fan) for 14-16 minutes. I love freezing extra cookie dough whenever I make batches so I always have a freshly baked treat whenever I want :) If you want it to spread more, lower the temperature and bake a little longer.

❓FAQ
Both can work because we're roasting the strawberries! I usually have frozen strawberries on hand for convenience but I have tried roasting both before. Fresh usually is faster to roast versus frozen.

Instructions
Roast Strawberries
- Spread strawberries in a single layer on a parchment lined baking sheet. Sprinkle lemon juice on top. Roast for 10-15 minutes, stir, then roast for another 10-15 minutes until soft and jammy. Strawberries are soft, slightly collapsed, and have a darker red color than when started. The fruit should easily mash with a spoon and smell sweet and concentrated. Let cool completely.200 grams frozen or fresh slices strawberries, ½-1 teaspoon freshly squeezed lemon juice

For Streusel
- In a medium-sized mixing bowl, combine all-purpose flour, granulated sugar, freeze dried strawberries, and salt.70 grams all-purpose flour, 30 grams white granulated sugar, ¼ teaspoon fine sea salt, 2-3 tablespoons freeze dried strawberry bits
- Gradually mix in melted butter until the mixture forms a crumbly, sandy texture. Set aside to start assembling cookie dough. If it's too soft, you can leave it in the fridge.

Cookie Dough
- In a medium bowl, whisk together dry ingredients.185 grams all purpose flour, 125 grams white granulated sugar, ½ teaspoon baking powder, ½ teaspoon baking soda, ½ teaspoon fine sea salt
- Stir in cooled melted butter, egg, and vanilla until a dough forms. If the dough feels too wet, chill for 15 minutes.113 grams unsalted butter, 1 tablespoon pure vanilla extract

- Press some cookie dough along the sides of the bowl. Drop spoonfuls of fully cooled, roasted strawberries inside and layer with more dough. Repeat once more so strawberries are layered through the dough.

- Scoop the dough with a 1.5 oz ice cream scoop (about 3 tablespoon each) and roll into streusel topping (leaving the bottom plain) and place onto a parchment or plastic-lined tray, placing them close together. Chill for at least 30 minutes - 1 hour, or until firm.

- When ready to bake, preheat the oven to 350 F (no fan) or 325 (with fan) with the rack in the middle of the oven.
- Transfer the chilled cookie dough balls to a parchment-lined baking sheet, spacing them about 3 inches apart. Bake for 12–16 minutes, or until baked to your liking. Move cookies to a wire rack to cool, then enjoy!

Notes
- Best enjoyed: same day / within 1–2 days for best texture
- Make-ahead option: dough can be chilled for up to 3 days or frozen for up to 3 months.
- Do not skip roasting the peaches.
- Baking cue to watch for: edges lightly golden brown like caramel colored, center still soft but set. It shouldn’t look really wet.
- Room temperature: same day is best but enjoy within 2 days just because fresh fruit is used.
- Freezer: Baked cookies can be frozen for up to 1 month (wrap tightly; thaw before serving).
