🍪Why You’ll Love This Recipe
Ease Level: Beginner-friendly cookie dough but the piping will take some practice to get that cute flower shape and you'll need a piping bag and piping tip.
Flavor Profile: Buttery, crisp shortbread with a delicate sweetness, balanced by the bright, fruity notes of strawberries. The edible cookie flowers are so cute!
🥣Ingredients
- Unsalted butter is adds richness and creates a tender crumb. It binds the dry ingredients together without adding liquid. Using unsalted butter lets you control the salt level in the recipe.
- Confectioners' sugar (powdered sugar) is what makes the cookies delicate, crumbly, and sweet.
- Corn starch adds to the shortbread's tenderness and helps keep the flower shape when piped.
- Milk adds a touch of moisture and flavor to the dough, helping it come together smoothly for piping.
- Freeze dried strawberries and strawberry emulsion add and enhances the strawberry flavors in the cookie without adding extra moisture so we cake a crisp, tender shortbread.

FAQ
Gently mix and handle the dough to prevent overworking, which can develop gluten and make the shortbread tough. Refrigerate the dough before baking to help the cookies hold their shape is super key!
⭐Busy Week? Make Ahead!
This is great to prepare a day or two beforehand when you have a busy week! Here’s a general schedule so you have an idea on what to work with :) hope it helps!
Day 1: Measure out dry ingredients, cover, and set aside. Measure out wet ingredients (including butter), cover, and keep in fridge. Blend freeze dried strawberry powder if you're using whole pieces and add it with the dry ingredients. Add piping tip to pastry bag. Line sheet pan with parchment paper and make sure there is space in your fridge for your sheet pans for the moment you need to chill the piped dough.
Day 2: Mix strawberry shortbread ingredients together to form dough and add to piping bag. Pipe out your strawberry flower shortbread cookies onto the sheet pan. Chill the dough. You can bake it once the cookie dough is fully chilled or chill overnight and bake the next day.
Day 3 (optional): Bake cookie dough and let cool until you can peel off the sheet pan. You can pipe chocolate daisies centers to make it extra cute! Now you can consume same day or pack it to bring to a party for the next day. Hope this steps break down helps make the baking process more manageable with your busy schedule! ٩(^ᗜ^ )و ´-

Hi, I'm Sharon :) I'm the author of this recipe! ٩>ᴗ<)و ok by this reading point you probably already know I LOVE strawberries LOL and I LOVE butter cookies! This recipe is so fun because I also LOVEEE making my treats extra pretty/cute so creating a cookie recipe I can pipe into whatever shape I'm in the mood for was the plan. I made these into flowers but next time I want to create heart shapes or cute bows hehe I'd love to hear what you think of this recipe! Leave a comment and let me know how it turned out. While I believe recipes are just a starting point for creativity, I always aim to make mine clear, helpful, and to add a little sparkle to your day. 𖹭.ᐟ✨ hehe

These look so good and easy. Can’t wait to try this recipe!!!
Amy says
can I change the butter to oil? or will it change the flavor and texture?
Sharon Hsu says
Hi Amy!
I tested this recipe with butter in mind when making it so I haven't tried it with oil. I don't think oil will work as a perfect replacement though, I think the flavor and texture will change...maybe not hold the shape either!

Hi Sharon, I love your recipes! My friend and I made these adorable strawberry cookies, and they were a big hit. I was curious, if you were to try a matcha version of this recipe, would you substitute the same amount of matcha powder for the strawberry powder and skip the strawberry emulsion or do you think there’s a better way to make a matcha version?
Sharon Hsu says
Hi Tiffany!! This review is so sweet to hear, thank you for trying my recipe! :) A matcha version sounds AMAZING. While I haven't tried matcha version yet, I've tried a chocolate version replacing the strawberry powder with black cocoa powder when I was making a Jiji the cat cookie and it works so theoretically what you described should also work. Hope that helps! - Sharon
