🥣Main Ingredients For Scones
For the vanilla bean scones:

Ingredient picture for the vanilla bean glaze to be added in the future :)
- Cake flour: Cake flour is a low-protein flour (about 6-8%), compared to all-purpose flour, which typically has 10-12%. This lower protein content reduces gluten formation, resulting in a tender, soft crumb, ideal for cakes, cupcakes, and other delicate baked goods. Cake flour also has a very fine texture, which helps it blend smoothly and absorb liquids evenly, giving cakes a lighter, airier consistency like for this scone recipe.
- Leavening agents: We use baking soda and baking powder in this recipe to provide a reliable rise in these baked scones.
- Unsalted butter: Using unsalted butter allows us to control the exact salt amount in these scones. If you only have salted butter, you can omit the salt in the recipe. The butter also is naturally a leavening agent and along with baking powder + baking soda, it helps the scones rise.
- Heavy cream: Heavy cream, also known as heavy whipping cream, is a high-fat (36-40%) dairy product made from cow's milk. It adds moisture to scone dough and, thanks to its rich fat content, helps create a tender crumb and adds depth of flavor. Brushing the tops of the scones with heavy cream before baking is a simple alternative to an egg wash. It encourages a beautiful golden color and a slightly crisp crust due to the natural sugars and fats in the cream.

Steps To Make Vanilla Bean Scones

Step 1: Stir together all dry ingredient. This is a way to sift and make sure it's all evenly distributed.

Step 2: Cut in unsalted butter until it looks like coarse, damp sand!

Step 3: Mix in heavy cream and vanilla until slightly crumbly.

Step 4: Turn the dough out onto a lightly floured surface or a sheet of parchment paper, and gently knead by hand to bring it together, avoid overworking the dough.

Step 5: Roll out and flatten the dough on parchment paper to about ½"-¾". Place it in the freezer for about 30 minutes, or until firm enough to cut.

Step 6: Remove the dough from the freezer and cut it into squares or triangles. Lightly brush the tops with heavy cream. Bake for 15-20 minutes (edges and bottoms should have browned while scone mostly still being pale).

Step 7: Mix vanilla bean glaze while scones are cooling. Spoon the vanilla bean glaze on top of the vanilla bean scones.

Enjoy!
Substitutions
- No vanilla? no problem! Use other extracts like orange, lemon, yuzu, black sesame
- Make it vegan by using vegan unsalted butter.
- Don't have cake flour? Cake flour makes the scones more tender but all-purpose flour works just fine as well. Both delicious!

How To Store Vanilla Bean Scones
At room temperature: Store baked scones in an airtight container at room temperature for up to 3 days. For the vanilla glaze, you can store at room temperature for up to 3 days or in the fridge for up to 7 days. I recommend toasting the scone for it to be nice and warm and then putting your topping of choice on.
Freeze: In an airtight container, freeze baked scones for up to 2 months. Let it defrost at room temperature. Enjoy it after defrosting or toast it. You can freeze vanilla glazed scones after the glaze dries. Freeze unbaked scones for up to 3 months.
Top Tip
FREEZE the unbaked vanilla bean scones dough before baking so it holds its shape. These are perfect to make ahead of time!
FAQ
One common mistake is overmixing the dough, which can lead to tough, dense scones instead of light and flaky ones. Another pitfall is using warm butter; cold butter is essential for creating those signature tender layers. Lastly, rolling the dough too thin or baking at the wrong temperature can result in flat or overly dry scones.
The secret lies in keeping the butter cold and not overworking the dough. This ensures the butter stays in small chunks, creating steam pockets during baking for a flaky texture. Using the right balance of wet and dry ingredients is also key—too much liquid can make scones heavy, while too little will dry them out. Finally, baking at a high temperature gives scones a golden exterior while keeping the inside soft and tender.
Scones and biscuits might look similar but their texture and sweetness are different. Scones are typically sweeter, often with add-ins like fruit, chocolate, or spices, and are enjoyed as a tea-time treat. Biscuits, on the other hand, are flakier, less sweet, and often served savory as a side to soups or gravies.
A vanilla scone is subtly sweet with warm, aromatic vanilla notes. Its texture is tender with a slightly crisp exterior.

⭐Overwhelmed? Make Scones Ahead!
Do you feel overwhelmed or have a busy schedule but still want to bake this vanilla bean scones recipe?! Here is a general idea of the work flow I would do as a professionally trained baker (with a degree in Baking & Pastry Arts) and years of experience in NYC bakeries to help you have more fun!⬇٩(^ᗜ^ )و ´-
(Spoiler (ᴗ͈ˬᴗ͈)ꕤ.゚: most bakes in professional kitchens/bakeries are broken down into steps for efficiency. We usually aren't measuring, mixing, baking EVERYTHING on the same day. Some components are prepped beforehand so don't feel bad if you feel like you aren't accomplishing what you'd like to in your baking journey, you just haven't figured out the right system yet! Let me help you with that~⋆˙♡)
You can combine any of the work days to suit your timeline. The idea is you really don't have to make everything in ONE DAY! My recipe card below is written in a way to make and bake this in one day for recipe structuring purposes (as well as reading or printing) but if I were to break up the baking steps for these vanilla bean scones, this is what I would do:
˗ˏˋ ★ Day By Day Baking Steps For Vanilla Bean Scones ★ ˎˊ˗
Day 1 (measure ingredients and make glaze): Measure out the dry ingredients for the vanilla bean scones, cover and set aside. For the wet ingredients, measure the unsalted butter in a separate container, cover and put in fridge. Measure the rest of the wet ingredients in another container, cover and put in fridge.
Day 2 (make scone dough and freeze): Make the scone dough, cut, and freeze. If your dough is too soft because it's warm, freeze the dough for about 30 minutes or until it's easier to cut into the shapes you'd like then freeze completely before baking. You bake these scones from frozen so it holds its shape much better (and this makes it super easy to make way in advance to have in your freezer and bake whenever.)
Day 3 (bake and glaze): Bake scone dough and cool. Glaze with vanilla bean glaze and enjoy! Optionally, you can melt some chocolate to decorate the vanilla bean scones like I did after the glaze has set a little bit (in about 30 minutes).
˗ˏˋ ★ ˎˊ˗ woohoo, you did it!!! ٩>ᴗ<)و I hope this was fun and it helped you become a more confident baker ˗ˏˋ ★ ˎˊ˗
